Happy Covid times!

Please email me your favorite 2020-2021 recipe. Mine is not great but not horrible. It was developed out of the desire to cook with what was at home.. Someone had brought me organic tofu. I finally soaked my (own) first sea cucumber overnight after my immigrant friend Audrey convinced me, “they cooked like meat.” I needed celery to help with a personal health issue. I had spinach I’d accidentally frozen in my fridge.

Throw into the hot frying pan in this order:
Extra Virgin Olive oil
5 stalks organic celery, chopped,
and 1 well-soaked sea cucumber, chopped
1/2 package organic (non GMO soy) tofu
A big handful of spinach, as much as you need to use up. It cooks down fast.
CUMIN to taste
No salt because celery has alot of salt and too much salt is hard on the heart.

It’s healthy and I ate it all up but I’m not saying you need to make it as it’s a lot like the rest of my cooking. You may have tastier recipes to offer, so if they’re healthy * let me know if you’d like me to post them. *Make sure they don’t contain sugar, fractionated grains, or gluten. Anything with grass-fed yogurt or pastured animal products are ok! 1/2 to 2/3 vegetable – containing recipes are highly encouraged.

As far as acupuncture and nutrition, I have very little more to say but I’m still helping lots of people heal. I’m in the office Mondays through Wednesdays. Thursdays through Sundays you can join me working on maintaining forested or alpine trails or cross-country skiing. Thank you for the light you bring to the world.
